A rack that is "fall off the bone" is over cooked; you want the meat to be tender, but have a slight pull from the bone. Went there on a Sunday around 5 pm and it wasnt crowded at all. Nice selection of food too be a BBQ place (however the menu is very simple and not hard to navigate). The greens disappointed, but that's a small quibble.
